Ingredients 

50ml Chai Spiced Gin
1 Earl Grey teabag
25 ml freshly squeezed lemon juice
25ml sugar syrup (1:1 sugar and water)
1 egg white (optional)

How to prepare this summer cocktail

Infuse the teabag in the gin for 10 minutes at room temperature. Combine the tea-infused gin, lemon juice, sugar syrup and egg white in a cocktail shaker. Dry-shake (without any ice) to emulsify the egg. Add very cold ice and shake again until cold. Strain into a chilled cocktail glass and serve. 

Preparing at Home? Here are some Do's & Don'ts 

  • Use Rutland Square Gin if you are looking to add some more flavours to your cocktail
  • Muddle the fruits gently, to release flavours and not to crush the fruit into a pulp. Use a sturdy glass for precision. 
  • You might already know this one. Don't use warm soda water!
  • Pour the soda water last, very gently, as it will help maintain the fizz.
